Ingredients

For the biscuits:

  • 4 cups flour
  • 1 tsp salt
  • 8 tsp baking powder (make sure it’s fresh-date on bottom of can)
  • 1 tsp cream of tartar (don’t omit)
  • 2 tbs sugar
  • 1 cup veg. shortening
  • 1 cup milk

For the gravy:

  • 8 ounces breakfast sausage, cooked and chopped
  • (reserve 1 tbs drippings from sausage)
  • 2 tbs butter
  • 3 tbs flour
  • 1 cup half and half
  • 1 cup milk
  • ½ teaspoon salt
  • Fresh black pepper
  • ¼ tsp garlic powder

Preparation

For the biscuits:

  1. In a bowl, combine the first 5 ingredients; cut in the shortening using a pastry blender or two knives.
  2. Add the milk, a small amount at a time and mix until a dough forms.
  3. Knead on floured surface four times (no more) and pat out to ½” thick.
  4. Cut out using a 2” round cutter.
  5. Place 1” apart on baking sheet, and brush tops and sides with melted butter.
  6. Bake in preheated 375 oven for 12-14 minutes.

For the gravy:

  1. In a saucepan, over medium high heat, melt the butter with the sausage drippings.
  2. Add the flour to form a roux (paste) slowly stir in the cream and milk, salt, and garlic powder.
  3. Continue to cook until mixture is creamy and thick.
  4. Stir in the sausage and season to taste with salt and pepper.

Serving size: 1 biscuit, ¼ cup gravy
