This holiday favorite features quintessential Southern grits combined with rich cream and sharp Cheddar cheese in a baked casserole. It's great for a holiday brunch or as a side dish with ham or beef tenderloin.

Ingredients

  • 2 cups half-and-half
  • 2 cups milk
  • 1 cup uncooked stone-ground grits
  • ¼ cup butter
  • ½ cup cream cheese
  • 2 cups (8 ounces) shredded extra-sharp Cheddar cheese
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • ¼ cup grated Parmesan cheese

Preparation

  1. Combine half-and-half and milk in a large saucepan and cook over medium heat until mixture comes to a simmer.  Gradually whisk in grits.  Reduce heat to low and cook, uncovered, 25 minutes or until thick, stirring often. 
  2. Remove from heat, add butter, and stir until butter melts. Add cheese, egg, salt, and pepper and stir well.
  3. Preheat oven to 350°.
  4. Pour mixture into a lightly greased 11- x 7-inch baking dish.  Sprinkle evenly with Parmesan cheese.   Bake covered for 30 minutes or until mixture is set. Then bake uncover for 5 – 10 minutes until lightly brown. Serve immediately.
