Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • ½ cup butter, softened
  • 1 ¼ cups sugar
  • 2 eggs
  • 2/3 cup milk
  • 3 teaspoons vanilla extract
  • 2 cups diced peaches
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar

For the crumb topping:
  • ¼ cup butter, softened
  • 3/4 cup flour
  • ½ cup sugar

For the icing:
  • ¼ cup heavy cream
  • 1 1/2 cups powdered sugar

Preparation

  1. Preheat oven to 350F
  2. Grease a 9x13” baking dish
  3. In a bowl, combine the flour, baking powder, and salt
  4. In another bowl, combine the butter, eggs, sugar, salt, vanilla extract, and milk
  5. Gently combine the wet and dry mixtures
  6. Fold in the peaches and pour into a greased 9x13” pan
  7. Gently mix the powdered sugar and cream cheese
  8. Drop spoonfuls of the cream cheese mixture on top of unbaked batter
  9. Bake for 22-26 minutes
  10. Meanwhile, combine the ingredients for the crumb topping and mix until mixture is the size of peas 
  11. Sprinkle mixture over cake and continue to bake 7 - 10 minutes
  12. Allow to cool before drizzling with icing. (To make icing: combine the heavy cream and powdered sugar until smooth)
