Ingredients

  • 1 lbs dry pasta

Sauce:

  • 3 Tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 3 Tablespoons all purpose flour
  • 1 3/4 cups milk
  • 2 Tablespoons cream cheese
  • 1 1/2 cups shredded parmesan cheese, plus extra for garnish
  • 3 heaping cups fresh spinach
  • 1/2 teaspoon salt
  • Cracked black pepper to taste

Chicken:

  • 1 lb chicken breast (cut into strips) or tenders
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoon butter

Preparation

  1. Bring a large pot of lightly salted water to a boil.
  2. Lay chicken out on a plate. Mix garlic powder, Italian seasoning, salt, and pepper in a small bowl. Season both sides of the chicken with the mix.
  3. Heat a deep skillet over medium-high heat. Add oil and butter; when the butter is melted and sizzling, arrange the chicken tenders in a single layer. Cook for 4 to 5 minutes or until the bottom is nicely browned, then flip and cook for another 3 to 4 minutes or until cooked. Transfer chicken to a cutting board and cut into bite-sized pieces.
  4. Cook the pasta until al dente. Reserve 1/2 cup of pasta water.
  5. Wipe or clean the skillet in which you cooked the chicken in. Return the skillet in which you cooked the chicken to the stove over medium heat.
  6. Add butter to skillet and melt. Add garlic and saute until fragrant.
  7. Add flour to the butter and whisk to combine. Let cook for 1 minute until fragrant and lightly browned.
  8. Add milk a little at a time, whisking constantly. Milk will thicken up quickly at the beginning, but as you whisk the rest of the milk in it will loosen the sauce.
  9. Cook sauce, whisking occasionally, until thickened.
  10. Add chicken, spinach, and cream cheese. Stir until the cheese has melted.
  11. Turn off the heat and stir in parmesan cheese.
  12. Return the cooked pasta to the sauce and stir to combine. Stir in the reserved pasta water a few tablespoons at a time until the sauce is smooth and creamy to your liking.
  13. Add salt and pepper to taste. Garnish with extra parmesan and fresh cracked black pepper (optional) and serve immediately.
