Ingredients

  • 4 overripe tomatoes
  • 2 shallots
  • 1 cup milk
  • 1 cup Parmesan cheese
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 2 Tbsp extra virgin olive oil
  • 8 basil leaves
  • 4 slices wheat bread

Preparation

  1. Cube tomatoes and finely chop shallots.
  2. Warm a pan on medium heat until it’s hot and coat the pan with extra virgin olive oil.
  3. Add the tomatoes and shallots to the pan, lower the heat to medium-low, and cook for 15-20 minutes until the tomatoes soften into a sauce.
  4. Add milk, Parmesan cheese, Italian seasoning, and salt to the tomato sauce.
  5. Mix well until all ingredients are incorporated, and remove the sauce from the heat.
  6. Top toasted bread with the creamy tomato sauce.
  7. Finish off the bruschetta by drizzling olive oil and garnishing it with finely cut basil.
