At SOBEWFF 2026, Florida Milk brought dairy to life with our Signature Brazilian Cheese Bites—crispy on the outside, warm and irresistibly cheesy on the inside. Crafted with whole Florida Milk and a bold blend of aged and fresh cheeses, these golden bites are paired with a vibrant trio of sweet, savory, and spicy sauces inspired by Miami flavor.
Ingredients
Brazilian Cheese Bites
- 1 cup whole milk
- ½ cup unsalted butter
- 1 tsp kosher salt
- 2 cups tapioca flour
- 2 large eggs
- 1 cup shredded whole milk mozzarella
- ¾ cup shredded aged white cheddar
- ½ cup freshly grated parmesan
- Optional: 1 tbsp heavy cream
Guava Cream Cheese (Sweet)
- ½ cup guava marmalade
- 4 oz cream cheese, softened
- 1 tbsp fresh lime juice
- Pinch salt
- 1 tbsp milk or heavy cream
Warm Aged Cheddar & Parmesan Cream (Savory)
- 1 tbsp unsalted butter
- 1 small shallot, finely minced
- 1 cup whole milk, warmed
- ¾ cup shredded aged white cheddar
- ¼ cup freshly grated parmesan
- 2 tbsp cream cheese
- ½ tsp Dijon mustard
- Pinch white pepper
- Salt to taste
Smoked Chipotle Yogurt Crema (Spicy)
- ½ cup sour cream or crema
- ½ cup whole milk plain Greek yogurt
- 1–2 chipotle peppers in adobo, minced
- 1 tbsp lime juice
- Pinch smoked paprika
- Salt to taste
Preparation
Brazilian Cheese Bites
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a saucepan, heat milk, butter, and salt until just simmering.
- Remove from heat and stir in tapioca flour until fully combined.
- Allow mixture to cool slightly. Add eggs one at a time, mixing until smooth and glossy.
- Fold in mozzarella, cheddar, and parmesan until evenly distributed and the mixture is smooth.
- Scoop into 1-inch balls and place on prepared baking sheet.
- Bake 18–22 minutes, until puffed and lightly golden.
- Serve warm.
Guava Cream Cheese (Sweet)
- Blend cream cheese and guava marmalade until smooth.
- Whisk in lime juice and salt.
- Add milk or heavy cream to reach a smooth drizzle consistency.
- Chill until ready to serve.
Warm Aged Cheddar & Parmesan Cream (Savory)
- Melt butter in a saucepan over medium heat.
- Add shallot and sauté until soft and translucent, about 2–3 minutes.
- Stir in warm milk and heat gently.
- Reduce heat to low and whisk in cheddar, parmesan, and cream cheese until smooth.
- Add Dijon and white pepper. Adjust salt as needed.
- Keep warm over low heat until serving.
Smoked Chipotle Yogurt Crema (Spicy)
- Mix all ingredients until smooth.
- Adjust spice level to preference.
- Chill 30 minutes before serving.
Notes:
Serve cheese bites warm and pair with all three sauces for dipping or drizzling. Mix and match flavors to create the perfect sweet, savory, or spicy bite.
