Recipe by Diahann Smith @DiahannCooks, inspired by traditional German beer cheese dip.

Ingredients

  • 2 packages of frozen soft pretzel bites
  • Coarse salt to decorate
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 3/4 cup whole milk
  • 1/4 cup light beer
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 2 cups sharp Cheddar cheese, shredded
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Preparation

  1. Prepare pretzel bites according to package directions and keep warm.
  2. In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute.
  3. Slowly whisk in milk and beer (if using) until smooth.
  4. Stir in Dijon mustard, garlic powder, and smoked paprika.
  5. Reduce heat to low and gradually add cheese, stirring until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Transfer dip to a serving bowl, garnish with parsley, and serve warm with pretzel bites.

Note

For an alcohol-free version: Substitute the beer with an additional 1/4 cup milk.
