Lemon Mascarpone Stuffed French Toast

Ingredients
- 8 slices brioche bread
- 3/4 cup mascarpone
- 1/3 cup lemon curd
- ¾ cup plus + 1 tbsp milk, divided
- 3 eggs
- 1 tsp vanilla extract
- ¼ tsp cinnamon
- 2 tbsp butter
Preparation
- In a small bowl, mix together mascarpone, lemon curd and 1 tbsp milk, until smooth.
- In a shallow bowl, whisk together eggs, ¾ cup milk, vanilla extract and cinnamon, until well combined.
- Spread some lemon mascarpone cream on one piece of bread, top with another piece of bread to create a sandwich. Repeat to create 4 sandwiches.
- Melt butter in a pan over medium heat.
- Dip sandwich in egg mixture and place in the hot pan. Cook for a few minutes until golden brown. Flip and repeat on the other side.
- Slice and top with powdered sugar, if desired. Serve immediately.
