Ingredients

  • 8 slices brioche bread
  • 3/4 cup mascarpone
  • 1/3 cup lemon curd
  • ¾ cup plus + 1 tbsp milk, divided
  • 3 eggs
  • 1 tsp vanilla extract
  • ¼ tsp cinnamon
  • 2 tbsp butter

Preparation

  1. In a small bowl, mix together mascarpone, lemon curd and 1 tbsp milk, until smooth.
  2. In a shallow bowl, whisk together eggs, ¾ cup milk, vanilla extract and cinnamon, until well combined.
  3. Spread some lemon mascarpone cream on one piece of bread, top with another piece of bread to create a sandwich. Repeat to create 4 sandwiches.
  4. Melt butter in a pan over medium heat.
  5. Dip sandwich in egg mixture and place in the hot pan. Cook for a few minutes until golden brown. Flip and repeat on the other side.
  6. Slice and top with powdered sugar, if desired. Serve immediately.
