Ingredients
For the cake:
- 2 large eggs
- 1/2 cup melted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup milk
- 2 tsp vanilla extract
- 3 cups all purpose flour
- 1 tsp cinnamon powder
- 1 tbsp baking powder
For the cinnamon apple filling:
- 2 large apples, peeled & diced
- 2-3 tsp cinnamon powder
For the streusel topping:
- 3/4 cup brown sugar
- 1 1/4 cup flour
- 2 tsp cinnamon powder
- 1/2 cup melted butter
Preparation
Directions:
- Create the streusel topping first. Melt butter in the microwave & let cool completely. Combine brown sugar, flour, & cinnamon in a small bowl. Pour cooled melted butter over top, mixing until a crumbly texture is reached. Place into the fridge until ready to use.
- Make the cinnamon apple layer by combining the diced apples and cinnamon powder into a bowl, set aside.
- For the coffee cake, combine the eggs, melted butter, sugars, vanilla, & milk into a large bowl. Mix well.
- Mix flour, baking powder, & cinnamon into the wet batter. Pour half of the batter into a parchment paper lined baking sheet. Pour cinnamon apples over top of batter in an even layer, pressing down thoroughly. Pour remainder of batter over top of apple layer & spread into an even layer. Finally, sprinkle streusel over top.
- Bake coffee cake @ 375 degrees for 35 minutes, or until a toothpick inserted comes out clean. Remove & let cool before slicing.
