Ingredients

  • 3 eggs
  • 1 1⁄2 cups granulated sugar
  • 1⁄3 cup vegetable oil
  • 2⁄3 cup plain kefir
  • 1 tbsp vanilla extract
  • 1⁄2 a lemon + zest
  • 2 cups flour
  • 2 tsp baking powder
  • 1⁄2 tsp salt
  • 4-5 strawberries or more to taste/decoration
  • 1 cup blueberries or more to taste/decoration
  • 1⁄2 cup raspberries or more to taste/decoration
  • 2 cups heavy cream

Preparation

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine eggs, granulated sugar, and vegetable oil. Whisk until well combined.
  3. Mix in Kefir, lemon juice, zest, and vanilla until smooth.
  4. Sift in flour, baking powder, and salt, then whisk until fully combined.
  5. Toss berries in flour to prevent sinking, then fold them into the batter.
  6. Grease and flour two 8-inch cake pans, then divide the batter evenly between them.
  7. Bake for 40-45 minutes or until a toothpick comes out clean. Let the cakes cool before slicing into layers.
  8. Whip heavy cream until peaks form using a stand or hand-held mixer.
  9. Layer cakes with cream and berries between each layer.
  10. Top the cake with a dollop of cream and decorate with more berries.
