Ingredients
- 3 eggs
- 1 1⁄2 cups granulated sugar
- 1⁄3 cup vegetable oil
- 2⁄3 cup plain kefir
- 1 tbsp vanilla extract
- 1⁄2 a lemon + zest
- 2 cups flour
- 2 tsp baking powder
- 1⁄2 tsp salt
- 4-5 strawberries or more to taste/decoration
- 1 cup blueberries or more to taste/decoration
- 1⁄2 cup raspberries or more to taste/decoration
- 2 cups heavy cream
Preparation
- Preheat your oven to 350°F.
- In a large mixing bowl, combine eggs, granulated sugar, and vegetable oil. Whisk until well combined.
- Mix in Kefir, lemon juice, zest, and vanilla until smooth.
- Sift in flour, baking powder, and salt, then whisk until fully combined.
- Toss berries in flour to prevent sinking, then fold them into the batter.
- Grease and flour two 8-inch cake pans, then divide the batter evenly between them.
- Bake for 40-45 minutes or until a toothpick comes out clean. Let the cakes cool before slicing into layers.
- Whip heavy cream until peaks form using a stand or hand-held mixer.
- Layer cakes with cream and berries between each layer.
- Top the cake with a dollop of cream and decorate with more berries.
