Ingredients

For the Valentine Beet Crepes:

  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp beet puree (for natural red color and added nutrients)
  • 1 tbsp sugar or monk fruit sweetener
  • 1 tbsp melted butter or neutral oil
  • 1 tsp vanilla extract
  • Pinch of salt

For the Lemon Bliss Filling:

  • 1 cup cottage cheese (blended until smooth for a creamy texture)
  • 2 tbsp powdered sugar or sweetener (adjust to taste)
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice

For the Strawberry Love Sauce:

  • 1 ½ cups fresh or frozen strawberries
  • 2 tbsp sugar or sweetener
  • 1 tsp fresh lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)

For the Greek Yogurt Whipped Cream:

  • ½ cup plain Greek yogurt (for protein boost)
  • ½ cup heavy whipping cream
  • 2 tbsp powdered sugar or sweetener
  • 1 tsp vanilla extract

Preparation

Prepare the Valentine Beet Crepes:

  1. In a blender, combine all the crepe ingredients and blend until smooth. Let the batter rest for 15-20 minutes to allow the flour to hydrate.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter.
  3. Pour about ¼ cup of batter into the pan, swirling to coat the bottom evenly. Cook for 1-2 minutes on each side until set. Repeat with the remaining batter.

Make the Lemon Bliss Filling:

  1. In a bowl, mix the blended cottage cheese, powdered sugar, lemon zest, and lemon juice until smooth. Taste and adjust sweetness as desired.

Cook the Strawberry Love Sauce:

  1. In a saucepan over medium heat, combine strawberries, sugar, and lemon juice. Cook until the strawberries soften and the sauce thickens (about 8-10 minutes).
  2. For a thicker consistency, stir in the cornstarch slurry and cook for another minute. Let cool slightly.

Whip the Greek Yogurt Cream:

  1. In a chilled bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form.
  2. Gently fold in the Greek yogurt until smooth and creamy.

Assemble the Crepes:

  1. Spread a generous layer of lemon bliss filling on each crepe and fold or roll them into a romantic heart shape.
  2. Drizzle with warm strawberry love sauce and top with a dollop of Greek yogurt whipped cream.
