Creamy mini cheesecakes with a hint of lemon, topped with strawberry glaze and fresh berries, perfect for game day entertaining.

Ingredients
Mini Cheesecake Bites
- 16 vanilla wafer cookies
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp lemon zest
Berry Topping
- 1 cup prepared strawberry glaze or strawberry preserves
- 1 cup sliced fresh strawberries
- 1/2 cup fresh blueberries
Preparation
- Preheat oven to 325°F and line a mini muffin pan with paper liners.
- Place one vanilla wafer cookie in the bottom of each muffin cup.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs, vanilla extract, and lemon zest and mix until combined.
- Fill muffin cups about 3/4 full.
- Bake for 15–18 minutes, or until centers are set.
- Cool completely, then refrigerate for at least 1 hour.
- Spoon a small amount of strawberry glaze over each cheesecake.
- Top with sliced strawberries and fresh blueberries before serving.
