Ingredients

  • 1 loaf Cuban bread 
  • 4 tablespoons butter, room temperature 
  • ¼ cup olive salad, giardiniera or pickles of choice 
  • 1 pound ham 
  • 1 pound roasted pork, shredded
  • 1 pound Swiss cheese 
  • Mustard (optional)

Preparation

  1. Preheat a griddle on medium-low heat. 
  2. Cut the loaf of bread into 4 sections. Then cut each section in half  and spread butter generously on the inside of the slices. 
  3. Assemble the sandwiches:spread mustard on the bread. Then add  olive salad, giardiniera or pickles. Add some roasted pork, a couple  slices of ham and two slices of cheese per sandwich. Close each sandwich. 
  4. Add a little butter or cooking spray to the hot griddle.
  5. Place each sandwich on the griddle. Lay a heavy pan, press or  foil wrapped brick on top to flatten sandwich. Grill both sides on  medium-low heat until cheese is melted, approximately 3-5 minutes  per side. 
  6. Slice each flattened sandwich in half diagonally. Serve with black beans.
