Ingredients
- 1 bag frozen diced hash browns (26 - 30 oz)
- 1.5 cup frozen diced onions
- 8 eggs
- 1/4 cup whole milk
- Salt and pepper to taste
- 2 tbsp Olive oil
- non-stick spray
- Chopped parsley for garnish
For the Creamy Garlic Aioli:
- 1/2 cup plain Greek yogurt
- 1 tbsp mayonnaise
- 2 garlic cloves, grated
- Salt to taste
Preparation
- Preheat oven to 375°F and lightly grease an 8x8-inch baking dish.
- In a large bowl, whisk eggs, milk, salt, and pepper. Set aside while oven preheats.
- Heat olive oil in a skillet over medium heat. Cook hash browns and onions for 8–10 minutes until lightly golden and softened.
