Ingredients

  • 4 tbsp Butter
  • 4 tbsp Flour
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • ½ teaspoon Paprika
  • ¼ - ½  teaspoon Cayenne pepper
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt & Pepper to taste
  • 1 cup whole Milk
  • ½ cup Whipping cream
  • 1 cup Funky Buddha Floridian wheat beer
  • 2 cups Cabot sharp cheddar cheese, shredded
  • 1 cup Mexican blend (Monterey Jack and Cheddar)
  • 1 cup Gruyere cheese, shredded

Preparation

  1. Melt butter. Add flour, onion powder, garlic powder, paprika, cayenne pepper, Worcestershire, and mustard over medium heat in a saucepan. Cook for 3 - 5 minutes until the mixture almost doubles in size and does not taste like flour. It will be golden because of the spices, but do not scorch it.
  2. Stir in beer, milk and cream, whisking until smooth after each addition. Continue cooking over medium heat until the sauce is thick and bubbly.
  3. Reduce heat to low, add cheeses, and stir just until melted and smooth. Taste it, and add more seasonings.  If needed, use an immersion blender to combine the sauce and break-up any lumps.
  4. Serve warm with pretzels bites, tortilla chips or veggies.

Notes: You can make it ahead of time. If you are, add 2 ounces of cream cheese or American cheese when you are making the sauce (before the beer and milk so it melts fully) to help emulsify the dip and make sure it does not break when reheating. When reheating, microwave, or heat on the stove top. Place on medium heat and add a little milk or cream and adjust the seasonings if needed.
