Few things delight a crowd like these Mini Taco Pizzas. With the bold flavors of classic tacos layered onto a crisp tortilla base, these bite sized wonders are the perfect union of simplicity and flavor. Ideal for entertaining or spicing up a weeknight meal, they invite creativity and deliver on taste with every crunchy and savory bite.
Ingredients
- 4 – Soft (12”) flour tortillas
- 1/3 cup refried beans
- ¼ cup taco sauce
- ½ cup shredded cheddar cheese
- 1 medium tomato, diced
- 1/3 cup prepared taco meat (beef or chicken)
- 1 cup shredded lettuce
Preparation
- Preheat oven to 375F
- Using round 2” biscuit or cookie cutter cut out three circles from each tortilla (the rim of a drinking glass may also be used)
- Place rounds on a cookie sheet that has been lightly sprayed with cooking spray
- Spread 1 tablespoon of refried beans on each tortilla
- Spoon 1 teaspoon of taco sauce on top of beans
- Add taco meat of choice, and sprinkle with cheese
- Bake for 8-10 minutes or until cheese is melted and tortillas are crisp
- Top with lettuce and tomato and serve
