Ingredients
- 2 cups precooked corn flour (harina de maíz precocida)
- 2 1⁄2 cups water (added gradually)
- 500 g fresh Mozzarella cheese (shredded or cut into small pieces)
- Salt to taste
- 1 stick unsalted butter (for cooking)
Preparation
- In a mixing bowl, combine precooked corn flour with water, adding one cup at a time. Stir with a spoon or knead with hands until dough is soft, pliable, and not too sticky. Season with salt.
- Roll tennis ball–sized pieces of dough, then flatten into a round disk.
- Place cheese in the center of one disk, making sure it doesn’t spill out. Cover with another flattened disk of equal size and seal the edges.
- Preheat a griddle to 370°F. Melt butter on the surface, then place arepas down.
- Lower heat to 250°F and cook each side for about 7 minutes, or until golden, crispy in the middle, and not burnt. Flip and repeat on the other side.
- Serve warm with Colombian hot chocolate.
