Ingredients

  • 2 cups precooked corn flour (harina de maíz precocida)
  • 2 1⁄2 cups water (added gradually)
  • 500 g fresh Mozzarella cheese (shredded or cut into small pieces)
  • Salt to taste
  • 1 stick unsalted butter (for cooking)

Preparation

  1. In a mixing bowl, combine precooked corn flour with water, adding one cup at a time. Stir with a spoon or knead with hands until dough is soft, pliable, and not too sticky. Season with salt.
  2. Roll tennis ball–sized pieces of dough, then flatten into a round disk.
  3. Place cheese in the center of one disk, making sure it doesn’t spill out. Cover with another flattened disk of equal size and seal the edges.
  4. Preheat a griddle to 370°F. Melt butter on the surface, then place arepas down.
  5. Lower heat to 250°F and cook each side for about 7 minutes, or until golden, crispy in the middle, and not burnt. Flip and repeat on the other side.
  6. Serve warm with Colombian hot chocolate.
