Ingredients

  • 12-15 corn tortillas
  • 3 pieces chicken breast (skinless)
  • ¾ C green pepper
  • ½ C onion
  • 1 C shredded pepper jack cheese
  • ½ C fresh cilantro
  • ¾ C iceberg lettuce
  • ¾ C fresh diced tomato
  • 1 piece lemon
  • ½ C sour cream
  • ½ tsp onion powder
  • 1 tsp taco seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp cayenne pepper
  • 1 tsp olive oil

Preparation

  1. Place corn tortillas in muffin tin and bake at 400F for 10 minutes. Remove and let cool.
  2. Saute chicken. Add diced onion and green pepper. Add seasoning (salt, pepper, cayenne, taco seasoning, onion powder). Cook until chicken is no longer pink and vegetables are softened.
  3. Fill taco cup with mixture. Top with pepper jack cheese, lettuce, cilantro and tomato.
  4. Pipe sour cream on top and fresh lemon juice.

Serving Instructions: Serve immediately.
