Ingredients
- 12-15 corn tortillas
- 3 pieces chicken breast (skinless)
- ¾ C green pepper
- ½ C onion
- 1 C shredded pepper jack cheese
- ½ C fresh cilantro
- ¾ C iceberg lettuce
- ¾ C fresh diced tomato
- 1 piece lemon
- ½ C sour cream
- ½ tsp onion powder
- 1 tsp taco seasoning
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp cayenne pepper
- 1 tsp olive oil
Preparation
- Place corn tortillas in muffin tin and bake at 400F for 10 minutes. Remove and let cool.
- Saute chicken. Add diced onion and green pepper. Add seasoning (salt, pepper, cayenne, taco seasoning, onion powder). Cook until chicken is no longer pink and vegetables are softened.
- Fill taco cup with mixture. Top with pepper jack cheese, lettuce, cilantro and tomato.
- Pipe sour cream on top and fresh lemon juice.
Serving Instructions: Serve immediately.
