Veggie Quesadilla with Chopped Peppers

Ingredients
- 2 large flour tortillas
- 1 cup shredded cheese
- 1/2 cup chopped bell peppers
- 2 tbsp chopped onions (optional)
- 2 tbsp corn or black beans (optional)
- Salt & pepper to taste
Preparation
- Place tortilla on a microwave-safe plate.
- Sprinkle the cheese onto the tortilla all the way to the edge.
- Add peppers. Season with salt & pepper.
- Top with the second tortilla.
- Microwave for 1 to 11⁄2 minutes.
- Let sit for 1 minute, cut, and serve.
- Serve with a glass of milk.
Optional toppings: plain yogurt, sour cream, salsa, guac, or hot sauce and a glass of milk
