Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese
  • 1/2 cup chopped bell peppers
  • 2 tbsp chopped onions (optional)
  • 2 tbsp corn or black beans (optional)
  • Salt & pepper to taste

Preparation

  1. Place tortilla on a microwave-safe plate.
  2. Sprinkle the cheese onto the tortilla all the way to the edge.
  3. Add peppers. Season with salt & pepper.
  4. Top with the second tortilla.
  5. Microwave for 1 to 11⁄2 minutes.
  6. Let sit for 1 minute, cut, and serve.
  7. Serve with a glass of milk.

Optional toppings: plain yogurt, sour cream, salsa, guac, or hot sauce and a glass of milk
