Ingredients

  • 1 T minced garlic
  • 4 T butter
  • 4 T brown sugar
  • 2 C butternut squash, cubed
  • 1-2 zucchini, (cut into spaghetti strands using a spiralizer to make “zoodles”)
  • 4 pieces bacon, crumbled
  • 1 C Gouda, shredded
  • 1 C parmesan cheese
  • Balsamic glaze, to garnish
  • Salad fried onions, to garnish
  • ½ C sour cream

Preparation

  1. Heat a skillet on medium heat, and add garlic and butter. Once the butter is melted, add brown sugar and stir until dissolved.
  2. Add butternut squash, and cook until al dente. Stir frequently.
  3. Add the zucchini zoodles, bacon and Gouda and parmesan cheeses. Stir until all the cheese is melted.
  4. Add a drizzle of balsamic glaze, and stir lightly.

Serving Instructions: Place zoodles on a plate, and top with fried onions and a dollop of sour cream. Serve with your favorite vegetable.
