Ingredients
- 300 ml (1 ¼ cups) whole milk
- 100 ml (⅓ cup + 1 tbsp) heavy whipping cream
- 100 g (3.5 oz) dark chocolate, finely chopped
- 50 g (1.75 oz) milk chocolate, finely chopped
- 12 g (2 tbsp) unsweetened cocoa powder
- 1 ½–2 tbsp granulated sugar, depending on desired sweetness
- Zest of ½ large orange
- 1 cinnamon stick
- ½ vanilla bean, split lengthwise
- 2 green cardamom pods, lightly crushed
- Pinch of salt
- Whipped cream, for topping
Preparation
- In a medium saucepan, combine the whole milk, heavy whipping cream, orange zest, cinnamon stick, vanilla bean, lightly crushed cardamom pods, granulated sugar, cocoa powder, and salt.
- Heat over medium-low heat, whisking occasionally to incorporate the cocoa powder and sugar, until the mixture is hot and steaming but not boiling.
- Remove the saucepan from the heat, cover, and let the mixture infuse for 8–10 minutes.
- While the mixture is infusing, finely chop the dark chocolate and milk chocolate.
- Strain the infused milk mixture through a fine-mesh strainer to remove the orange zest and spices.
- Return the strained mixture to the saucepan and add the finely chopped dark chocolate and milk chocolate.
- Place the saucepan over low heat and whisk continuously until the chocolate is completely melted and the mixture is smooth, glossy, and slightly thickened. Do not allow it to boil.
- Pour into a mug, top with whipped cream, and serve immediately.
