Ingredients

For the Bars

  • 2 ½ cups old fashioned oats
  • 1 cup milk
  • 1/3 cup vanilla protein powder (optional)
  • 1 tsp baking powder
  • 3 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 egg
  • ¼ cup melted coconut oil
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 1 ½ cups grated carrots
  • Feel free to add some nuts! (walnuts, pecans, etc . . .)

For the Frosting

  • 2 oz reduced fat cream cheese
  • 1 tbsp milk
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract

Preparation

  1. In a large bowl, combine the dry ingredients (oats, protein powder, baking powder, cinnamon, nutmeg, and salt).
  2. In a separate bowl, whisk together egg, milk, coconut oil, maple syrup, and vanilla extract until combined. Add the dry ingredients and mix again. Lastly, fold in the carrots (and nuts if you are going to use some!).
  3. Prepare a baking dish with parchment paper and transfer the mixture. Bake at 350 degrees F for about 40 min (or until golden brown) and let cool completely before decorating with the frosting.
  4. For the frosting, mix all the ingredients and whip until smooth. Drizzle on top of the carrot cake energy bars or use a pipping bag to decorate.
