This holiday favorite features quintessential Southern grits combined with rich cream and sharp Cheddar cheese in a baked casserole. It's great for a holiday brunch or as a side dish with ham or beef tenderloin.
Ingredients
- 2 cups half-and-half
- 2 cups milk
- 1 cup uncooked stone-ground grits
- ¼ cup butter
- ½ cup cream cheese
- 2 cups (8 ounces) shredded extra-sharp Cheddar cheese
- 1 large egg, lightly beaten
- 1 teaspoon salt
- ½ teaspoon freshly ground pepper
- ¼ cup grated Parmesan cheese
Preparation
- Combine half-and-half and milk in a large saucepan and cook over medium heat until mixture comes to a simmer. Gradually whisk in grits. Reduce heat to low and cook, uncovered, 25 minutes or until thick, stirring often.
- Remove from heat, add butter, and stir until butter melts. Add cheese, egg, salt, and pepper and stir well.
- Preheat oven to 350°.
- Pour mixture into a lightly greased 11- x 7-inch baking dish. Sprinkle evenly with Parmesan cheese. Bake covered for 30 minutes or until mixture is set. Then bake uncover for 5 – 10 minutes until lightly brown. Serve immediately.
