Chia Seed and Granola Berry Pudding
- 5 tablespoons chia seeds
- 1 1/2 cups Milk
- 1/2 cup strawberries, finely diced
- 1 cup blueberries
- 1/4 granola
- Mint for garnishing
- In a quart sized jar or storage bowl, stir together the chia seeds, and milk. Let sit for 10 minutes. Stir once again. Cover and store in the refrigerator overnight.
- To serve, assemble the chia pudding, sliced strawberries, and granola in layers; in jars or in a bowl. Garnish with granola and mint.
Note: You can make this recipe with lactose free milk if you are lactose intolerant
