Ingredients

  • 1 Haas avocado 
  • ¼ cup plain Greek yogurt
  • 1 teaspoon fresh lemon juice 
  • 1/4 teaspoon Kosher salt 
  • 1/4 teaspoon freshly ground black pepper 
  • 2 slices whole grain bread, toasted 
  • 1 teaspoon extra-virgin olive oil 
  • Everything bagel topping

Preparation

  1. In a small bowl, combine avocado, Greek yogurt, lemon juice, salt, and pepper. Gently mash with the back of a fork. Let it rest so the flavors develop. In the meantime, toast the bread. 
  2. Top toasted bread with avocado mixture. Drizzle with olive oil and sprinkle over desired toppings.

Other Toppings: Cilantro, red onions, sea salt, pepper and or red pepper flakes.
