Creamy Avocado Toast with a Protein Punch

Ingredients
- 1 Haas avocado
- ¼ cup plain Greek yogurt
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 slices whole grain bread, toasted
- 1 teaspoon extra-virgin olive oil
- Everything bagel topping
Preparation
- In a small bowl, combine avocado, Greek yogurt, lemon juice, salt, and pepper. Gently mash with the back of a fork. Let it rest so the flavors develop. In the meantime, toast the bread.
- Top toasted bread with avocado mixture. Drizzle with olive oil and sprinkle over desired toppings.
Other Toppings: Cilantro, red onions, sea salt, pepper and or red pepper flakes.
