Start your day with energy with these protein pancakes—a perfect combination of flavor and nutrition. Made with cottage cheese, oats, and egg whites, they’re a healthy and delicious alternative. Served with yogurt and fresh berries, they’ll become your new favorite breakfast!

Ingredients

  • ½ cup low-fat cottage cheese
  • ½ cup oats
  • 3 egg whites
  • ½ tsp baking powder
  • Pinch of salt
  • Cooking spray
  • ¼ cup low-fat yogurt (any flavor you prefer)
  • Fresh berries
  • 2 tbsp peanut butter chips

Preparation

  1. In a blender, measure and combine the cottage cheese, oats, and egg whites. The mixture should look thick but smooth.
  2. On the stove over medium-high heat, heat a skillet. Spray it with cooking spray. Using a measuring cup, pour some of the mixture into the skillet. After 4 minutes, flip the pancake. It should be firm and easy to turn.
  3. Cook for another 5 minutes or until golden on both sides.
  4. Place the pancakes on a plate, spreading yogurt between each one and topping them with fresh berries.
