Ingredients
- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- 1 teaspoon salt
- ½ cup butter, softened
- 1 ¼ cups sugar
- 2 eggs
- 2/3 cup milk
- 3 teaspoons vanilla extract
- 2 cups diced peaches
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- ¼ cup butter, softened
- 3/4 cup flour
- ½ cup sugar
- ¼ cup heavy cream
- 1 1/2 cups powdered sugar
Preparation
- Preheat oven to 350F
- Grease a 9x13” baking dish
- In a bowl, combine the flour, baking powder, and salt
- In another bowl, combine the butter, eggs, sugar, salt, vanilla extract, and milk
- Gently combine the wet and dry mixtures
- Fold in the peaches and pour into a greased 9x13” pan
- Gently mix the powdered sugar and cream cheese
- Drop spoonfuls of the cream cheese mixture on top of unbaked batter
- Bake for 22-26 minutes
- Meanwhile, combine the ingredients for the crumb topping and mix until mixture is the size of peas
- Sprinkle mixture over cake and continue to bake 7 - 10 minutes
- Allow to cool before drizzling with icing. (To make icing: combine the heavy cream and powdered sugar until smooth)
