Ingredients
Shiver Me Timbers Lemon Berry Delight
- 3.4 oz. box instant lemon Jello pudding
- 24 oz Greek yogurt
- 12 oz frozen whipped topping, thawed
- 1.5 pints fresh berries (blackberry, strawberry, blueberry)
- 12 vanilla wafers
Apple Mutiny
- 1 tsp apple pie spice (cinnamon, nutmeg, allspice)
- ¼ C brown sugar
- 3 T melted butter
- 8 oz. package of crescent rolls
- 1/3 C pecans
- 1 large granny smith apple, peeled
Yo ho ho Cheesecake Bites
Crust
- 1-1/2 C graham cracker crumbs
- ¼ C confectioner sugar
- 1/3 C butter, melted
- 1/8 tsp salt
Filling
- 16 oz. cream cheese, at room temperature
- 2 eggs
- 1/3 C sugar
- 1 tsp vanilla
Topping
- Assorted fruit to top (if desired)
Preparation
Shiver Me Timbers Lemon Berry Delight
- Mix pudding, yogurt and whipping cream together.
- Add chopped berries. Stir.
Apple Mutiny
- Mix together apple pie spice and brown sugar.
- Melt butter in a small dish.
- Open crescent rolls, and separate and lie them flat on a cookie sheet. Sprinkle the brown sugar mixture on top of each triangle. Add pecans (if desired).
- Cut peeled apple into thin slices – one for each roll. Dip apple slice in melted butter, and place on thicker of crescent roll. Roll the crescent roll and brush with remaining butter and sprinkle top lightly with brown sugar mixture.
- Bake at 375°F for 10 to 12 minutes.
Yo ho ho Cheesecake Bites
- Combine the graham cracker crumbs, confectioners’ sugar, melted butter and salt. Grease mini-muffin tins, and press 1 teaspoon of crust mixture in each muffin tin.
- Combine the cream cheese, eggs, sugar and vanilla. Place 1 tablespoon of the cream cheese filling on top each crusted tin.
- Bake at 350°F for 12 minutes.
- Let cool, and top with favorite assorted fruit.
Serving Instructions: Serve ½ cup of fruit mixture with 2 vanilla wafers.
