Creamy, 4-Cheese Spaghetti and Meatball

Ingredients
Meatballs
- 16.3 oz. can Pillsbury home-style refrigerated biscuits
- 16 turkey meatballs, cooked
- 1 C marinara sauce
- 1 C shredded mozzarella & Italian cheese
- 4 T butter
- 2 garlic cloves, minced
- ½ tsp Italian seasoning
- salt (to season)
- parsley (to garnish)
4-Cheese Garlic Pasta
- 8 oz spaghetti, uncooked
- 1 T butter
- 1 T olive oil
- 1-1/2 T garlic, minced
- 4 oz. cream cheese – mentioned in recipe, not in ingredients
- 1/3 C heavy cream – mentioned in recipe, not in ingredients
- ½ C mozzarella cheese, shredded
- ½ C Parmesan cheese, shredded
- ½ C Romano cheese
Preparation
Meatballs
- Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
- Using your hands, flatten each biscuit into a circle. Place one meatball and 2 T of marinara sauce in the center of the dough rounds. Top with 2 T cheese. Wrap dough around by pressing edges to seal. Place seam side down on baking sheet, leaving room for spreading.
- In a small bowl, whisk together melted butter, garlic, Italian seasoning and salt. Evenly spoon on top of each biscuit.
- Bake for 18 to 20 minutes or until golden brown.
Pasta
- Boil salted water in a 3-quart pot and add spaghetti. Cook for 7 to 8 minutes, until al dente. Drain, reserving 1 C of pasta water.
- In a sauté pan, melt butter and add olive oil over medium heat. Add garlic and stir, cooking for a minute.
- Add spaghetti, 1 C of pasta water, cream cheese, and heavy cream to the skillet.
- Bring to a boil, and add mozzarella, parmesan and Romano cheeses. Stir constantly until cheeses are melted and pasta is completely coated (about 1 minute).
- Reduce heat, and continue to stir until sauce is thickened and reduced (about 1 to 2 minutes).
- Remove from heat, and stir in parsley. Add salt and pepper to taste.
Serving Instructions: Spoon spaghetti onto plate, and top with one meatball. Sprinkle with fresh parsley and parmesan cheese. Drizzle with remaining marinara sauce.
