Creamy Chicken & Spinach Pasta

Ingredients
- 1 lbs dry pasta
Sauce:
- 3 Tablespoons unsalted butter
- 2 cloves garlic, minced
- 3 Tablespoons all purpose flour
- 1 3/4 cups milk
- 2 Tablespoons cream cheese
- 1 1/2 cups shredded parmesan cheese, plus extra for garnish
- 3 heaping cups fresh spinach
- 1/2 teaspoon salt
- Cracked black pepper to taste
Chicken:
- 1 lb chicken breast (cut into strips) or tenders
- 1 1/2 teaspoons garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 2 tablespoon butter
Preparation
- Bring a large pot of lightly salted water to a boil.
- Lay chicken out on a plate. Mix garlic powder, Italian seasoning, salt, and pepper in a small bowl. Season both sides of the chicken with the mix.
- Heat a deep skillet over medium-high heat. Add oil and butter; when the butter is melted and sizzling, arrange the chicken tenders in a single layer. Cook for 4 to 5 minutes or until the bottom is nicely browned, then flip and cook for another 3 to 4 minutes or until cooked. Transfer chicken to a cutting board and cut into bite-sized pieces.
- Cook the pasta until al dente. Reserve 1/2 cup of pasta water.
- Wipe or clean the skillet in which you cooked the chicken in. Return the skillet in which you cooked the chicken to the stove over medium heat.
- Add butter to skillet and melt. Add garlic and saute until fragrant.
- Add flour to the butter and whisk to combine. Let cook for 1 minute until fragrant and lightly browned.
- Add milk a little at a time, whisking constantly. Milk will thicken up quickly at the beginning, but as you whisk the rest of the milk in it will loosen the sauce.
- Cook sauce, whisking occasionally, until thickened.
- Add chicken, spinach, and cream cheese. Stir until the cheese has melted.
- Turn off the heat and stir in parmesan cheese.
- Return the cooked pasta to the sauce and stir to combine. Stir in the reserved pasta water a few tablespoons at a time until the sauce is smooth and creamy to your liking.
- Add salt and pepper to taste. Garnish with extra parmesan and fresh cracked black pepper (optional) and serve immediately.
