Ingredients

  • 1 lb low fat ground turkey - cooked
  • 3/4 cup diced Vidalia onion - approx 1 onion
  • 1/4 cup diced sweet peppers
  • 8 oz pasta (half 1lb box) - I used mini farfalle
  • 1 cup half & half
  • 1 cup chicken broth - I used low sodium
  • 1 pint (1 container) quartered cherry tomatoes
  • 15 oz whole milk ricotta (1 small container)
  • 2 cups spinach
  • 1/2 cup parmesan (save some to top) 
  • 1 tsp garlic powder
  • 1 tsp favorite all-purpose seasoning

Preparation

  1. Preheat oven to 400 degrees
  2. In a 13x9 baking dish, add the cooked ground turkey, seasonings, tomato, onion and peppers
  3. Add the uncooked pasta
  4. Pour on the chicken broth and half & half
  5. Mix well
  6. Cover with aluminum foil
  7. Bake for 35-45 minutes - you want the pasta to feel al dente
  8. Mix in the ricotta and spinach, stir well
  9. Top with parmesan cheese
  10. Bake uncovered for 10-15 minutes
  11. Serve with a cold glass of milk!

Note: if you use a different type of pasta, cooking time may vary
