Ingredients
- 10 large eggs
- 4 oz. 1% milk
- 2 cups of low fat Colby or cheddar cheese, shredded
- ¼ cup of celery, diced
- 3 cups of spinach, coarsely chopped
- ¼ cup of peppers, red/yellow or green, diced
Preparation
- In a bowl, whisk eggs with milk. Pour egg mixture into greased muffin tin about 2/3 of the way. Add cheese and veggies to each tin of eggs.
- Bake in over at 350 degrees for 15 minutes
