Cauliflower Dough-Margherita Pizza

Ingredients
- 36 oz. cauliflower rice
- 2 eggs
- ½ tbsp garlic salt
- 1 large tomato (sliced)
- 2 cupeshredded mozzarella
- 2 cups shredded mild cheddar cheese
- 6 basil leaves
- 1 tsp butter
Preparation
- Put cauliflower rice in a food processor until it is pureed.
- Pour cauliflower rice into a microwave safe bowl, and microwave for 7 minutes. Remove any excess water using a paper towel.
- Add eggs and garlic salt. Mix well until the mixture reaches a doughy consistency.
- Preheat oven to 450°F, and line a baking sheet with tin foil. Use butter to grease. Add cauliflower dough mixture, using pressure to form it into a thin, circular shape.
- Bake for 40 minutes in pre-heated oven.
- Once the crust has hardened, cover with tomato slices and shredded mozzarella and cheddar cheeses.
- Once the cheese has melted, add basil. Cool for 5 to 10 minutes. Slice and serve.
Serving Instructions: Slice into 8 slices and serve each person a slice.
