Ingredients
- 2 boneless skinless chicken breasts, cooked and diced
- 1 cup low fat yogurt (Greek is preferred)
- 1 tablespoon Jerk seasoning paste (powder can be substituted, paste is recommended)
- 1/4 teaspoon salt
- 1 medium carrot, diced small
- 1 stalk celery, diced
- 2 scallions, sliced
- 4 Kaiser rolls, toasted
- sprouts, avocado for garnish
Preparation
- In a small bowl, combine the yogurt, Jerk seasoning, and salt.
- Mix in the chicken, carrots, onion, and celery. Salt to taste.
- Serve in toasted buns and garnish with sprouts and avocado if desired.
