Ingredients

  • 2 boneless skinless chicken breasts, cooked and diced
  • 1 cup low fat yogurt (Greek is preferred)
  • 1 tablespoon Jerk seasoning paste (powder can be substituted, paste is recommended)
  • 1/4 teaspoon salt
  • 1 medium carrot, diced small
  • 1 stalk celery, diced
  • 2 scallions, sliced
  • 4 Kaiser rolls, toasted
  • sprouts, avocado for garnish

Preparation

  1. In a small bowl, combine the yogurt, Jerk seasoning, and salt.
  2. Mix in the chicken, carrots, onion, and celery. Salt to taste.
  3. Serve in toasted buns and garnish with sprouts and avocado if desired.
