Ingredients

  • 2 tablespoons butter 
  • 2 tablespoons all-purpose flour 
  • 1 (12) ounce container fresh Oysters,(drained/rinsed ; reserve liquor) chopped if desired 
  • 1  1/2 cups whole milk 
  • 1/2 cup heavy cream 
  • 1/2 of a medium onion, diced 
  • 1 celery stalk, sliced
  • salt/pepper to taste
  • hot sauce (optional)   

Preparation

  1. a saucepan, over medium heat melt the butter.
  2. Add the onions and cook until onions are golden.
  3. Stir in the flour to coat.
  4. Add the celery and oysters and cook until oysters begin to curl around the edges, approximately 4-6 minutes.
  5. Strain the oyster liquor over fine mesh to remove any possible sediment.
  6. Add the milk, cream and heat until simmering.
  7. Add salt and pepper to taste and hot sauce if desired.
