Ingredients
- 4 overripe tomatoes
- 2 shallots
- 1 cup milk
- 1 cup Parmesan cheese
- 2 tsp Italian seasoning
- 1/2 tsp salt
- 2 Tbsp extra virgin olive oil
- 8 basil leaves
- 4 slices wheat bread
Preparation
- Cube tomatoes and finely chop shallots.
- Warm a pan on medium heat until it’s hot and coat the pan with extra virgin olive oil.
- Add the tomatoes and shallots to the pan, lower the heat to medium-low, and cook for 15-20 minutes until the tomatoes soften into a sauce.
- Add milk, Parmesan cheese, Italian seasoning, and salt to the tomato sauce.
- Mix well until all ingredients are incorporated, and remove the sauce from the heat.
- Top toasted bread with the creamy tomato sauce.
- Finish off the bruschetta by drizzling olive oil and garnishing it with finely cut basil.
