Ingredients
For the biscuits:
- 4 cups flour
- 1 tsp salt
- 8 tsp baking powder (make sure it’s fresh-date on bottom of can)
- 1 tsp cream of tartar (don’t omit)
- 2 tbs sugar
- 1 cup veg. shortening
- 1 cup milk
For the gravy:
- 8 ounces breakfast sausage, cooked and chopped
- (reserve 1 tbs drippings from sausage)
- 2 tbs butter
- 3 tbs flour
- 1 cup half and half
- 1 cup milk
- ½ teaspoon salt
- Fresh black pepper
- ¼ tsp garlic powder
Preparation
For the biscuits:
- In a bowl, combine the first 5 ingredients; cut in the shortening using a pastry blender or two knives.
- Add the milk, a small amount at a time and mix until a dough forms.
- Knead on floured surface four times (no more) and pat out to ½” thick.
- Cut out using a 2” round cutter.
- Place 1” apart on baking sheet, and brush tops and sides with melted butter.
- Bake in preheated 375 oven for 12-14 minutes.
For the gravy:
- In a saucepan, over medium high heat, melt the butter with the sausage drippings.
- Add the flour to form a roux (paste) slowly stir in the cream and milk, salt, and garlic powder.
- Continue to cook until mixture is creamy and thick.
- Stir in the sausage and season to taste with salt and pepper.
Serving size: 1 biscuit, ¼ cup gravy
