Sweet Potato Mash with Pecans

Sweet Potato Mash:
- 4 tablespoons Butter
- 4-5 Sweet Potatoes, chopped into 1/2inch pieces
- 1 cup of milk, divided
- 1 teaspoon salt
Pecan Topping:
- 1 cup Pecans
- 2 tablespoons Butter
- ½ teaspoon Cinnamon
- 2 tablespoons Maple Syrup
Preparation
Melt butter in a large saucepan over medium heat. Add the sweet potatoes and sauté for about five minutes. Add 3/4 cup of the milk and salt, stir to coat the sweet potatoes. Cover the pot and turn the heat down to medium-low.
Cook the sweet potatoes, stirring occasionally, until soft. About 15 minutes. Once cooked, mash the potatoes. Add the final 1/4 cup of milk and whisk the sweet potatoes, until whipped and lightened in texture. Spoon into serving bowl.
Pecan Topping:
In a small pan, melt butter, add pecans and cinnamon. Sauté for a few minutes. Remove from heat and drizzle maple syrup over.
Spoon over mashed sweet potatoes. Serve immediately.
