Ingredients
Bites
- ½ cup strawberries, diced
- ½ cup blueberries
- ½ cup raspberries, diced
- ¼ cup pomegranate seeds (optional)
- 1 cup Strawberry or Vanilla Greek yogurt
Coating
- 2 cups of chocolate chips
- 2 tbsp coconut oil
- Flake salt and or sprinkles
Preparation
- Combine yogurt and berries in a mixing bowl, then fold until well blended.
- Drop large spoon fools in a cookie sheet lined with parchment paper or silicone matt.
- Freeze the yogurt bites for about 2 – 3 hours depending on their size until they are solid.
- Melt and temper the chocolate. Place chocolate chips and coconut oil in a microwave safe bowl, then heat in 60 second intervals at 50% power for the first two minutes and then at 30 second intervals, stirring in between, until fully melted.
- Utilizing two forks to hold the frozen yogurt bite, quickly dip it in the chocolate until fully coated and place in parchment lined cookie sheet. Add flake salt or sprinkles immediately after each piece. Place in the freezer again for about 20 - 30 minutes.
- After frozen you can store them in a Ziplock bag in the freezer or container. Take them out to soften for five minutes before enjoying.
