Cheddar and Pepper Biscuits

Ingredients
- 2 cups flour
- ½ teaspoon salt
- 2 teaspoons baking powder *check date on can
- ½ teaspoon cream of tartar
- 1 tablespoon sugar
- ½ cup vegetable shortening
- 2/3 cup milk
- 1 cup shredded cheddar cheese
- 1 tablespoon freshly ground pepper
Preparation
- Preheat oven to 425F
- In a bowl, combine the flour, salt, baking powder, and pepper.
- Add the vegetable shortening in small pieces, and mix until mixture resembles coarse crumbs. A potato masher works great at this!
- Stir in the milk, and mix gently until a dough is formed.
- Turn onto a floured surface and knead in the cheese.
- Pat into a mound that is 1 ½” thick.
- Using a 2” cutter, cut into rounds and place in an ungreased cake pan with sides touching.
- Bake in preheated oven for 15 minutes, checking after ten for doneness.
