Ingredients

  • 2 cups flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder *check date on can
  • ½ teaspoon cream of tartar
  • 1 tablespoon sugar
  • ½ cup vegetable shortening
  • 2/3 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tablespoon freshly ground pepper

Preparation

  1. Preheat oven to 425F
  2. In a bowl, combine the flour, salt, baking powder, and pepper.
  3. Add the vegetable shortening in small pieces, and mix until mixture resembles coarse crumbs. A potato masher works great at this!
  4. Stir in the milk, and mix gently until a dough is formed.
  5. Turn onto a floured surface and knead in the cheese.
  6. Pat into a mound that is 1 ½” thick.
  7. Using a 2” cutter, cut into rounds and place in an ungreased cake pan with sides touching.
  8. Bake in preheated oven for 15 minutes, checking after ten for doneness. 

*Serve with our homemade Corn and Jalapeño Chowder made with Cheddar Cheese
