Ingredients

Rhubarb Strawberry Sauce

  • 1 - 1 1/2 cups strawberries, leaves removed and diced
  • 2 stalks rhubarb, diced
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice

Milkshake

  • 3 cups vanilla ice cream
  • 1 1/2 cups whole milk

Toppings (optional)

  • Whipped cream
  • Fresh strawberries

Preparation

  1. Add all the sauce ingredients into a small saucepan.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce to medium-low and simmer the mixture for 10-12 mins, stirring frequently.
  4. Remove from the heat and allow the mixture to cool completely. To speed up the cooling process, store the sauce in a bowl and place it in the refrigerator.
  5. Once the rhubarb strawberry sauce is completely cool, add the ice cream, milk and ¾ of the sauce into a blender. Blend until smooth.
  6. To serve, smear the remaining rhubarb strawberry sauce in glasses, pour in the milkshake and top with whipped cream and a strawberry if desired.
  7. Enjoy!

Notes: The sauce doesn’t have to be entirely smooth, as it will be blended with the remaining ingredients.
