Ingredients
Rhubarb Strawberry Sauce
- 1 - 1 1/2 cups strawberries, leaves removed and diced
- 2 stalks rhubarb, diced
- ¼ cup granulated sugar
- 1 tbsp lemon juice
Milkshake
- 3 cups vanilla ice cream
- 1 1/2 cups whole milk
Toppings (optional)
- Whipped cream
- Fresh strawberries
Preparation
- Add all the sauce ingredients into a small saucepan.
- Bring the mixture to a boil over medium-high heat.
- Reduce to medium-low and simmer the mixture for 10-12 mins, stirring frequently.
- Remove from the heat and allow the mixture to cool completely. To speed up the cooling process, store the sauce in a bowl and place it in the refrigerator.
- Once the rhubarb strawberry sauce is completely cool, add the ice cream, milk and ¾ of the sauce into a blender. Blend until smooth.
- To serve, smear the remaining rhubarb strawberry sauce in glasses, pour in the milkshake and top with whipped cream and a strawberry if desired.
- Enjoy!
Notes: The sauce doesn’t have to be entirely smooth, as it will be blended with the remaining ingredients.
