Ingredients
- 8 eggs
- 1 cup whole milk
- 1/2 cup marinara sauce
- 1 teaspoon fresh oregano - chopped
- 1 teaspoon fresh basil - chopped
- 1/2 cup whole milk mozzarella, shredded
- 12-14 pepperoni slices
- 1 sweet onion, diced - I used a Vidalia Onion
- 1 jalapeno, diced - remove seeds for less heat
- 4 mini sweet peppers, diced
- 1 1/2 cups fresh spinach, approx. 2 handfuls
Preparation
- Preheat oven to 425 degrees.
- Clean and dice all veggies.
- Warm an oven-safe skillet, spray with olive oil spray.
- Add the onions, cook for 2- 3 minutes.
- Add in the peppers.
- While vegetables are cooking, mix eggs, fresh herbs, marinara sauce and milk in a medium bowl.
- Once the vegetables are soft, add in the spinach and cook for 1 min. It will shrink a lot.
- Gently pour in the milk/egg mixture to the skillet. Allow it to cook for 5-6 minutes, until the edges have begun to set, undisturbed.
- Next, sprinkle the cheese on top of the egg mixture. Top with the pepperoni slices.
- Transfer the frittata to the oven and allow it to cook for 6 minutes, until the eggs are cooked through.
- Serve with a glass of Florida Milk. Enjoy!
