Healthy Greek Pizza with Homemade Tzatziki Sauce

Full of creamy Greek-yogurt and mouth-watering cheese, this healthy Greek-inspired pizza is fun for the whole family and healthy! Recipe is written and created by Tracy Shaw of Food Wine Sunshine.
Ingredients
Pizza Crust
- 1 cup Self Rising Flour
- 1 cup Non fat Greek yogurt
Homemade Tzatziki Sauce
- 1 5.3 oz container of non fat Greek yogurt
- ¼ English cucumber, halved lengthwise
- 1 tsp minced garlic
- 1 tbsp fresh mint - chopped
- ½ tbsp fresh dill - chopped
- ½ lemon - zest from half the lemon
- 1 tbsp fresh lemon juice
Greek Pizza Toppings
- 1 ½ cups shredded Chicken - I used rotisserie chicken
- 1 sweet mini pepper
- 8 slices cucumber just in half
- shredded your favorite cheese - I used colby jack
Preparation
- Mix flour and yogurt
- Form into a roll
- Cut into 4 equal pieces
- Preheat oven to 375 degrees
- Place parchment paper on baking sheet
- Bake the 4 individual crusts at 375 degrees for 18 minutes
Homemade Tzatziki Sauce
- Scoop out the seeds of the cucumber
- Using the large holes on a grater, grate the cucumber
- Mix all ingredients in a small bowl and refrigerate until ready to use
Pizza Assembly
- Put the Homemade Tzatziki Sauce on the homemade pizza crusts
- Saute mini peppers in a splash of olive oil or butter, add in the chicken just to warm it up
- Top the sauced pizzas with shredded chicken, sauteed mini sweet peppers, cucumber slices, shredded cheese and sprinkle on a bit of the fresh dill
- Enjoy!
